You have to have a minimum two occurrences of a topic for it to be tagged. In your space, Bird hunting appears twice, and wildfowling only once. Also, single word tags score far lower than two+ word tags, and so you will usually see more phrases and proper names than single word tags.
Over time you will see the algorithm changing to be more flexible around some of these issues, as it learns from what has gone before.
Of course, as you have in this case, you can add a tag manually!
